Amazing? Yes! And It’s Pie!

What makes a recipe special?  The ingredients, (they have to be what you like), its simplicity and where it came from. This recipe came from a friend, Beverly Johnson, of Courtdale. It’s for coconut pie and she said I could share it with you. First off, you must love coconut and you’ll be delighted with its simplicity. It even forms its own crust. Try it, you won’t be disappointed. I’d love to hear if it’s to your liking.


2 cups milk

3/4 cup sugar

1/2 cup Bisquick Mix

4 eggs

1/4 cup butter or margarine

1 1/2 tsp. vanilla

1 cup coconut

Combine milk, sugar, Bisquick mix, eggs, butter and vanilla in blender on low speed for three minutes. Mix half of coconut into batter.

Pour into greased 10 inch pie pan. Let stand for 5 minutes. Sprinkle with remainder of coconut. Bake at 350 degrees for 40 min. Serve warm or cold.

  1. This is what we call ‘Impossible pie” because it calls for no crust. The Bisquick makes the crust. This also can be used for what I call “Vegetable pie”.or “Quiche”.Basically the same.I add broccoli,cheese,red sweet peppers, and sometimes little sausage pieces or cooked ham chunks or cooked chicken.I vary it. no sugar or vanilla. I use the basic recipe on box or the same Bisquick as above.I have no measurements except the Bisquick mix for a 10 inch pie dish.Deep dish is best.ummm they’re all good.
